Apple Crumb Buns

Apple Crumb Buns - Preheat oven to 325 and line 12 jumbo muffin tins with cupcake liners

BUNS:

2c. flour

1T. baking powder

1/4 tsp. salt

1 stick soft butter

1c. sugar

2 eggs

1 tsp. vanilla

1c. buttermilk

1 1/2c. chopped apples

TOPPING:  (Stir all until large crumbs form)

2 1/4c. flour

1 1/2c. light brown sugar

2 sticks soft butter

 

In a bowl, combine the first 3 dry ingredients.  Set aside.  Cream the butter and sugar.  Add the eggs one at a time and the vanilla.  Add the dry ingredients in small batches, alternating with the buttermilk.  Stir in the apples.  Pour into the muffin cups and sprinkle the topping on. Bake approx. 30-35 minutes until golden and a toothpick tests clean.

*Note-You will have left over topping.  Perhaps, for next time!
